Once you open the decanter and switch to the decorative stopper you have about six (up to maybe nine months) before the rum will 'break.' Pusser's is an overproof rum so you will start to loose rum to the Angel's Share the minute you break the seal.

Not that you will have the bottle full for more than six months.... I'm just saying in case.

Ah ha... I knew someone here would know the deal. The stopper that came with this bottle is the HMS Victory Bicentenary Stopper rather than the anchor they normally use so that's a bonus.

I have an open 750ml of Pussers on the bar at the moment so I'll save this bottle until I can do it justice in a timely fashion.

Getting back to the Maui rum...I like it OK, and try to support Bradda Kimo and da home boys. I do find that the burned sugar taste is prominent, but haven't really gotten the coffee flavors...maybe that's because I don't drink coffee, and probably wouldn't know it. The burned sugar/molasses is one of the same smells (one of the better ones, there are some rank ones) that eminate from the sugar mill here on a good day. The other smells that come from that place have earned it the nickname of Ass Factory. And I agree that the Maui rum will improve with age and with their experience. They seem to be growing, and that's a good sign. They weren't set up to ship off Maui for a long time, and now they seem to be shipping all over the place. I've met one or two of the guys and they seem nice (I don't think either one was Braddah himself, if there is one and I think there is). So I'm glad you guys are drinking it!

I'm going to resurrect this thread a bit to ask a question: which rums would you guys recommend for the Grog Log version of the Mai Tai? I'm looking specifically at the aged Jamaican rum and the Martinique rum, and where the hell would one get these (other than, say, Jamaica and Martinique)?

Beach Bum's recommendation is Appleton Extra (available most everywhere) and St. James Hors D'Age (can be tough to find).

Chip should be along shortly with some other recommendations for pairings. Trust them.

As an alternative to the St. James there is the Rhum Clement VSOP. Another great Martinique rum that will do for that side of the recipe, in light of the impending problems with St James distribution inside the US.

The Rhum Clement VSOP is a fine substitute for St. James. I've emptied a bottle of it already when I wasn't able to find St. James.

Speaking of rum/rhum, what are we gonna do when we can't get Lemon Hart anymore???

Oh, and just for your edification and knowledge, the sugar cane distilled spirit in Cape Verde is called grog, or grogue, so I guess that would make this the rum/rhum/ron/rhon/grog/grogue page.
