Personal Statement: Put coconut rum on snow!
Tonight I was feeling like making pies. One of the pies I made I decided to make a mai tai pie. (My husband’s favorite drink and he’s not feeling well) Image

It’s an orange flavored crust, orange, lemon and lime filling (like a lemon meringue pie) and then I flavored the meringue with almond.

I was wondering what is y’all’s favorite pie to make?

Normally, I don't really like to make pie but I do when it's absolutely necessary. (I prefer to make cookies!) I am partial to pumpkin pie, except I actually use a squash filling instead of pumpkin.

I hope the pie makes your husband feel better!

Most pies are delicious as last ng as they are sweet enough but coconut cream pies are the best. Great nana have some pie with breakfast now that you have reminded me.

For the crust I used OJ instead of water.

Then for the filling
1 Cup sugar
3tbsp cornstarch
1/2C water
1C OJ
Cooked in a sauce pan, let boil for 1 min then temper in
3 egg yolks (broken)
Remove from heat and add
3tbsp butter
1/2 tbsp lime juice
1/2 tbsp lemon juice
1 tbsp orange zest


Pour into baked pie shell.

I made a regular meringue except I added 1/2tsp of almond extract

This was a first attempt and I felt like the pie was too orangey... I think next time I will add almond extract to the pie shell instead of OJ. I’ll probably use lime zest instead of orange...

I love the cookie on top! I’ve read that squash is better than pumpkin in pies. Being a southerner I always loved sweet potato pie over pumpkin.

Our favorite go to pie is this pineapple pie... so good and a great way to use up any extra pineapple you find laying around that didn't make it into a drink [WINKING FACE]

Description
Similar to lemon meringue, this unique pie features a creamy pineapple filling. It’s also my favorite pie in the whole world. My grandma quit asking me what dessert I want her to make when we visit. She just makes one of these. Sometimes two. One for me and my grandpa and the other one for everyone else.

Ingredients
FOR THE PIE:
¾ cups Sugar
2 Tablespoons Butter
2 whole Eggs, Separated
⅓ cups Cornstarch
½ teaspoons Vanilla Extract
½ cups Plus 2 Tablespoons Of Water
8 ounces, weight Canned Crushed Pineapple
1 whole 9-inch Pre-baked Pie Crust

FOR THE MERINGUE:
2 whole Egg Whites (From Separated Eggs Above)
⅛ teaspoons Salt
¼ teaspoons Cream Of Tartar
6 Tablespoons Sugar
1 teaspoon Vanilla
Preparation
For the pie, cream sugar, butter, and egg yolks in a saucepan. Add cornstarch and vanilla. Add water and crushed pineapple. Cook over medium heat, stirring constantly until thick. Pour into a 9″ baked pastry.

For the meringue, whip egg whites until they begin to get foamy. Add the remaining ingredients and continue to whip until the meringue has reached soft peak stage and is smooth and glossy. Place the meringue over the cooled pie. Brown at 400ºF for just a few minutes. Store in the fridge until ready to serve. Tastes great warm or cold.

Me for my part, I love pies but less sweet because I can not stand too much sugar. Otherwise, pies are always a delight.
